The Ultimate Peanut Butter Cookie
This is quite possibly the best peanut butter cookie you'll ever make. And I'm not really sure what to call it. I mean, I hate just saying, "peanut butter cookie." It's so....commoner. No, this one has chocolate chips, peanut butter chips, and if that weren't enough for you...you roll the dang thing in SUGAR. I made these tonight for a cookie exchange and received a positive response. My mom (who is here visiting) nearly peed herself when she tried them. Now that's good.
Sugar-Dipped Chocolate and Peanut Butter Chip Cookie

1 1/4 cups flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 cup unsalted butter, softened
1 cup peanut butter at room temp
3/4 cup sugar, leave some aside for dipping
1 large egg, at room temp
1 TB milk
1 tsp. vanilla extract
1/2 cup peanut butter chips
1/2 cup chocolate chips
Preheat oven to 350 degrees. In a large bowl, combine the flour, baking soda, baking powder and salt. Set aside.In a large bowl, beat the butter and the peanut butter (oh. my. god. Does that alone not sound YUM?) and beat until smooth. Add egg and mix well. Add milk and vanilla extract. Add flour mixture and beat thoroughly.
Stir in peanut butter chips and chocolate chips. Place sprinkling sugar on a plate. Drop by rounded teaspoonfuls into the sugar, then onto ungreased cookie sheets. Using fork, lightly indent with a crisscross pattern, but don't overly flatten the cookies. Bake for 10-12 minutes.The cookies won't look done, but they are. Let them cool on the sheets for 1 minute, then remove to a rack to cool completely.
Now...pat yourself on the back and bask in the glory that is you.

The Big Fat Chewy Chocolate Chip Cookie
I kept hearing about this one recipe for "Big Fat Chewy Chocolate Chip Cookies." If nothing else, they sound dang good. I'm a big fan of recipes that just - SAY it. And these cookies live up to their name, my friend. I became one with my inner fat kid when these came out of the oven.
The Big Fat Chewy Chocolate Chip Cookie (makes about a dozen)
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, melted
- 1 cup packed brown sugar
- 1/2 cup white sugar
- 1 TB vanilla extract
- 1 egg
- 1 egg yolk
- 2 cups semisweet chocolate chips
Preheat oven to 350 degrees. Line cookie sheet with parchment paper. Sift together the flour, baking soda and salt; set aside. In a medium bowl, cream together melted butter, brown sugar and white sugar until well-blended. Beat in vanilla, egg and egg yolk until light and creamy. Mix in sifted ingredients until just blended. Stir in chocolate chips by hand, using a wooden spoon. Drop cookie dough 1/4 cup at a time onto prepared cookie sheet. Cookies should be about 3" apart.
Bake for 15-17 minutes in preheated oven. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

A Fast, Easy Recipe - and Healthy, Too!
If you feel like you're short on time and high on being-sick-of-that-backfat-roll-which-keeps-creeping-up-on-you, this is a great recipe to trim the calories but still keep the taste (shocking thought, ain't it?). It's also speedy. So you can be lazy AND calorie-conscious at the same time.
Farfalle with Creamy Mushroom Sauce
1 pound uncooked farfalle (bow tie pasta)
1 tablespoon butter
12 ounces presliced exotic mushroom blend
1/2 cup chopped onion
1/3 cup finely chopped shallots
1 tablespoon minced garlic
1 1/2 teaspoons salt
1/4 teaspoon freshly ground black pepper
1/4 cup dry white wine
2/3 cup whipping cream
1/2 cup (2 ounces) grated fresh Parmigiano-Reggiano cheese
2 tablespoons chopped fresh parsley
Cook pasta according to package directions, omitting salt and fat; drain. Melt the butter in a large nonstick skillet over medium-high heat. Add the mushrooms, onion, shallots, garlic, 1 teaspoon salt, and pepper; cook 12 minutes or until liquid evaporates and mushrooms are tender, stirring occasionally. Add wine; cook 2 minutes or until liquid evaporates, stirring occasionally. Remove from heat.
Add the cooked pasta, whipping cream, cheese, and 2 tablespoons parsley, tossing gently to coat. Stir in remaining 1/2 teaspoon salt. Garnish with minced fresh parsley, if desired. Serve immediately. Yield: 8 servings (serving size: 1 1/4 cups)
